Why White Peach.
The shortest season of the year.
Among all the seasonal parfaits in our yearly rotation, the peach window is the shortest. The first white peaches arrive on June 20, and by the end of August the season is already over. About two months — a hurried season.
We use Japanese white peach sourced directly from Okayama and other Japanese growing regions. Each day's parfait is built around the most beautiful peach available that morning — judged by sugar content, flesh condition, and aroma. Variety and origin shift slightly through the season as supply changes.
Peach has an extraordinarily narrow window of ripeness. That's why the time we can serve it is short. The peach parfait you have today exists only because of today's fruit.
